Package the ring in a much bigger box than is strictly necessary, and leave it under the tree. Have a bit of fun with the wrapping if you like, too, by over wrapping it to the point where it’ll take a good few minutes to get into.
Then, on Christmas morning, open your presents as normal. Only… it won’t be a normal present at all for her, will it?

Choose a nice restaurant, maybe fit in some live music or a show and book a room in a swanky hotel.
